Beef Wellington in golden puff pastry, with velvety purple carrot purée, bimi broccoli, grilled zucchini and cherry tomatoes, served with aromatic Café de Paris sauce

Dessert:

Boletus cheesecake with white chocolate and quince cream, forest fruit coulis, and baked white chocolate and walnut crumble, finished with freeze-dried raspberries

Delicate potato doughnuts stuffed with red cabbage jam, served with a crispy glaze in golden breadcrumbs, caramelized walnut crumbs and velvety broad bean paste

Main course:

Squid steak with aromatic chimichurri sauce, creamy cauliflower purée with a hint of hazelnuts, grilled endive and romaine lettuce, topped with a subtle elderflower glacé
