Main course:

* CACIO E PEPE * according to Giro Cacio e pepe (literally "cheese and pepper") is one of the oldest and most classic dishes of Roman cuisine. It originates from the Lazio region, with roots dating back to the time of the shepherds (called pastori) in central Italy. The dish arose from a need for simplicity and durability – ingredients like pasta, mature sheep's cheese (pecorino romano), and black pepper were easy to carry and didn't spoil during long journeys. This is why cacio e pepe is today considered the culinary embodiment of the "less is more" principle – just three ingredients create a deep, intense flavor. * PANNA COTTA WITH PISTACHIO * Panna cotta (Italian for "cooked cream") is a delicate, creamy dessert originating from the Piedmont region in northern Italy. Traditionally made with heated cream, sugar, and gelatin, it develops a distinctive, silky consistency when cooled. Although the dessert only gained popularity in the 20th century, its roots likely date back to the late 19th century. In 2001, panna cotta was added to the list of traditional regional products of Piedmont (Prodotti Agroalimentari Tradizionali Italiani).

* MUSHROOM RISOTTO * Risotto is a classic Italian dish originating in northern Italy, with a history dating back to the 16th century. Rice, introduced to Italy by the Arabs, quickly gained popularity in the Lombardy region. Risotto is made by slowly cooking rice in broth, which gives it its characteristic creamy consistency. One of the oldest and most famous risotto variants is risotto alla Milanese with saffron, which – according to legend – originated in 1574 when a young glassmaker's assistant accidentally added saffron to the rice during a wedding in Milan. * WHITE CHOCOLATE MOUSSE WITH RASPBERRIES AND COOKIES * One of Giro's signature desserts, it's been with us since the very beginning. Chocolate mousse (French: mousse au chocolat) originates from France and has been known since the 18th century, but the white chocolate version is a modern variation that only appeared in the 20th century – after the invention of white chocolate in Switzerland in the 1930s.
