Bursztynova is a place inspired by the flavor, tradition, and history of Polish long-ripening cheeses: Bursztyn, Szafir, and Rubin. Our story begins with the Spomlek Dairy Cooperative, whose roots date back to 1909. Here, in Radzyń Podlaski, we have been cultivating the heritage of dairy traditions for over a hundred years, drawing on the experience of generations. Our dairy is owned by farmers – cooperative members whose ancestors founded this unique community. Thanks to their work and the highest quality milk, we can create our greatest jewels – long-ripening cheeses: Bursztyn, Rubin, and Szafir, which belong to the "Skarby Serowara" brand. BursztyNova is more than a restaurant – it is a space where insightful knowledge of long-ripening cheeses is combined with the perfect harmony of flavor. We know absolutely everything about cheeses – how 6-month-old cheeses differ from 2-year-old cheeses, how to cut them to bring out their full aroma, and what those characteristic white crystals found in the cheese’s structure mean.
